A pump pushes the same hard pressure the whole way. A lever backs off as the puck gives out, which protects the cup from harsh, bitter oils.
A lever machine replaces the electric pump with a spring and a handle. The barista pulls the lever to start a gentle pre infusion that soaks the coffee. As the spring releases, pressure peaks near 9 bars and then slowly declines. That declining pressure is the signature of a lever pull. It pulls out sweetness and body while leaving the harsh, bitter oils behind.
The result is a shot that tastes more nuanced and more human. No two pulls are exactly alike.
