Cold brew is the heavyweight. It steeps for 12 to 24 hours at a high coffee to water ratio, so it pulls more caffeine than any hot method. The milk in a latte or cappuccino adds no caffeine at all. It comes entirely from the espresso shots underneath. The bean matters most. Robusta beans carry nearly twice the caffeine of Arabica, roughly 2.2 percent versus 1.2 percent by weight. Most specialty coffee is Arabica for its flavor, while Robusta shows up in many espresso blends and cheaper mass-market coffee for body, crema, and a caffeine kick. A shot pulled from a Robusta-heavy blend can hit noticeably harder than one from pure Arabica.
This one is backwards in most people’s heads. Roasting does not add or destroy much caffeine, so by weight light and dark roast are about the same. The catch is how you measure. Dark roast beans are lighter and puffier because they lost moisture and mass in the roaster, so a scoop of dark roast holds fewer beans and a scoop measured by weight holds more. Scoop for scoop, light roast can edge slightly higher. The difference is small either way, and roast changes flavor far more than caffeine.
Longer contact between water and coffee pulls out more caffeine. That is why cold brew, steeped for many hours, is so strong, and why a fast espresso shot holds less than a full cup of drip despite tasting more intense. Grind size and water temperature play smaller supporting roles, mostly by changing how fast the coffee extracts.
The simplest lever, and the one people forget. Caffeine rides along with volume, so a 16 ounce mug of drip coffee carries roughly twice the caffeine of an 8 ounce cup of the same brew. Before blaming the beans or the roast, check how much you actually poured.
