I was not brave enought to try it (plus I had way too much caffeine that day) but you have to ask them about their siphon brewer. It is a theatrical, full-immersion process using vacuum and vapor pressure that results in a wonderfully clean and aromatic cup. They also offer pour-overs using a Chemex, which uses a thick paper filter to create an exceptionally bright and pure brew that highlights the coffee's most delicate notes.
