Do NOT let the name fool you. Decadent Macaron may look like a pastry shop but it is quietly holding its own as a serious coffee destination in Gilbert. It is tucked into Verde at Cooley Station and feels like a playful little hideaway where someone decided dessert and serious coffee should share the same stage. I went in expecting cute. I did not expect to start mentally comparing their drinks to some of the bigger names in the East Valley.
The coffee menu is surprisingly deep for a place that could have coasted on sugar and vibes. They run a full espresso bar on a high end La Marzocco Linea machine pulling shots with beans from acclaimed Provision Coffee out of Phoenix which I also reviewed on this site so you can see exactly what they are working with. As of my last visit they are using Provision's Prickly Pear blend. A medium roast with notes of stone fruit, caramel and chocolate. Balanced and rich. One of Provision's top offerings and an excellent choice for a shop where the espresso needs to stand up alongside some serious desserts. And for those who want to slow things down a little, they also offer a pour over on the V60 using the same Prickly Pear beans. I did not get to try it on this visit but a balanced medium roast with that flavor profile sounds like a very good reason to come back.
Their specialty lattes are where things get fun. You can order most of them hot or iced, and they manage to walk that line where drinks feel creative without turning into pure sugar bombs. The Strawberry Fields latte is a good example. It leans into the strawberry theme but you can still taste the underlying espresso instead of losing it under syrup. On a warmer day, an iced Strawberry Fields with one of their heart shaped straws feels like peak Gilbert cafe energy in the best way.
Matcha drinkers are not an afterthought here either. One of the sleeper hits is the matcha latte but get it with macadamia nut milk instead of the dairy. It comes out very creamy and rich with that slight nuttiness from the macadamia that makes the drink feel a little more grown up than your average flavored matcha. If you usually struggle to find a good non dairy matcha option, this one is worth the drive.
Of course, the macarons are still a big part of the experience. You get a rotating cast of flavors plus playful specials and themed sets. The churro macaron is a standout if you like cinnamon sugar desserts. They also lean into events and themes in a way that fits the space. Think Taylor Swift album days, Star Wars or Barbie themes and even Disney weekends that make the whole cafe feel like a live Instagram story. Somehow it stays more charming than cringey, maybe because the execution backs it up.
The space itself is light, feminine and a little bit Paris meets East Valley. It feels like the kind of cafe where you could meet a friend, grab coffee and a couple of macarons and then realize you have been talking for an hour. Between the atmosphere, the strong coffee program built on Provision beans and the details like the cute heart shaped straws, Decadent Macaron ends up being more than just a dessert stop. If you are hunting for some of the best coffee in Gilbert but still want a place that feels fun and a little whimsical, this is an easy one to recommend.
